We all need to eat. Let's make it a simple part of our daily routine so we can spend our time on what matters most, whatever that might be! (Unless cooking is your passion - in which case, take all the time you want!)

As we enter a new season, Team Cultivate has rounded up some of our favorite weeknight dinner recipes that are not only simple and easy, but delicious, too! Whether you make them ahead of time or on the day of, we hope these recipes will save you lots of time (and stress!) in your meal prepping journey.

Favorite Weeknight Dinner Recipes

Meal: Beach Street Lemon Chicken Pasta
Picked by: Emily, Content Lead and Chief of Staff
She says: Pasta usually wins in our house when we're looking for something quick, easy, and crowd-pleasing! This linguine recipe has an interesting flavor profile (and in a pinch, you don't even have to give it the recommended time to marinate).

Meal: One Skillet "Egg Roll in a Bowl"
Picked by: Meg, Marketing Analyst
She saysA great (easy!) recipe I gravitate towards during busier seasons is egg roll in a bowl. Cabbage slaw mix + ground beef or turkey + ginger and soy sauce with rice. It's super simple and filling. We usually will add edamame and snap peas if we have them!

Meal: Greek Grilled Chicken Thighs and Salad
Picked by: Irene, E-Commerce Lead
She says: A go-to option for us is grilled chicken thighs tossed with Cavender's Greek season, rosemary, and olive oil. We add a bagged Caesar salad for a simple and yummy meal!

Meal: Cool Ranch Chicken Tostadadillas with Honey Lime Crema
Picked by: Mackenzie, Customer Delight Associate
She saysI feel like I bounce around a lot when it comes to meals, but you can never go wrong with tacos (or honestly, anything from the Half Baked Harvest site)! This has been one of my faves lately and is a lot of fun to make.

Meal: Breakfast-for-Dinner
Picked by: Marissa Kloess, Outreach Lead
She says: For a quick and easy dinner, we love breakfast-for-dinner: scrambled eggs and bacon with a side of everyone's favorite pancake concoction of choice (usually involving chocolate chips!).

Meal: Make-Your-Own Pizza
Picked by: Abbie, Marketing Assistant
She says: Since getting married, we do Sunday Night Pizza Night where we make our own pizzas! While we wish we could make our own crust, no one has time for that. So, most of the time we use a cauliflower crust from Trader Joe's and then go crazy on our own personal toppings (most often store-bought pesto and mozzarella)!

MealSheet Pan Gnocchi and Roasted Vegetables
Picked by: Meg
She says: This is a fast and easy sheet pan meal that we love. It's super versatile... you can add whatever you have on hand with the gnocchi (my favorite combination so far is cherry tomatoes and peppers). And, it's a meal that just tastes different than the other quick meals we make!

Meal: Chicken Pesto Pasta
Picked by: Lexi, Social and Email Lead
She says: One of my easy go to recipes is Chicken Pesto Pasta with Trader Joe's pre-made dairy free pesto. I use chickpea pasta and some chicken and it comes together so quickly!

Meal: Saucy 30 Minute Thai Basil Salmon Curry
Picked by: Bailey, Social Media Strategist
She says: I was never a big fan of seafood until discovering this recipe. Now, salmon has become a staple in our household! This creamy curry is filled with fresh greens, heart-healthy salmon, and flavors of citrus and ginger—all the good things! The best part? It comes together in just 30 minutes! As Mackenzie said, you can't go wrong with anything from Half Baked Harvest!

Meal: Taco Bar
Picked by: Shanda, Customer Delight Lead
She says: A taco bar is a staple in our house at least once a week! It’s easy and quick, and simple to customize. We'll make black beans, cauliflower rice, and sauteed beef or chicken for the filling, then top with cheese, lettuce, tomatoes, pico, guacamole, mango salsa, jalapeños, sour cream, and/or onions and peppers!

Meal: Chicken Tikka Masala
Picked by: Emily
She saysThis chicken tikka masala recipe comes together SO quickly (mostly hands-off!) once you have the spice mixes individually bagged and frozen! We add frozen peas for a little extra veg.

Meal: Chickpea Kale Pasta
Picked by: Irene
She says: This quick pasta dish comes from our very own Emily Thomas! It's a favorite in our house and has been passed to many friends, too. We like to mix it up by replacing the kale with collards!
